1. The Coffee Beans (Duh...)

You could use any kind of bean like the hazlenut or the traditional espresso bean. Of course more expensive ones will usually taste much better but if you just started it's okay to start out with cheaper beans. Take a few beans of whatever type you have in your kitchen and test each type separately with the chocolate to see which one produce best taste and also the appropriate bitterness and intensity that you want. Also make sure that the beans you have are dark roast bean because medium roast are as hard as rock. Chocolate covered beans sold in stores are usually made from peaberry beans which are smaller easier to bite.

2. The Chocolate

It's all up to your taste buds to choose which chocolate flavor you're going to use. You could try milk chocolate, dark, semi-sweet or white chocolate, it's all up to you. However, you should try using dipping chocolate instead of ordinary chocolate you find in stores. Dipping chocolate is makes the end result prettier and also easier to work with. It's a bit hard to find but when you are starting to get serious in makin chocolate covered coffee beans in your kitchen you should really try it. Don't worry too much if you can't find it though since chocolate chips and chocolate squares will work as well.

3. The Cooking Process

And now it's time to cook! First you need to melt the chocolate using a double boiler or microwave, it doesn't matter. Be sure to let the hot melted chocolate cool off a little bit to warm temperature to avoid burning your fingers.

Okay, once the chocolate are warmer just put the beans in it and stir them using a spoon. Scoop them up and let the excess chocolate to drip then put them on a wax paper to let them cool. You can either put in the fridge to make them hard faster or just let them sit there and they will harden overnight.
